Feta Pasta

Of course I had to come up with a vegan version of the feta pasta recipe that went viral. Such a fun and easy dish! The lemon zest gives it a nice fresh kick while the sweetness of the tomatoes pairs super well with the savory feta. A weeknight family favorite for sure!

Ingredients: (preferably organic)

  • 1 pack red lentil pasta
  • 2 packs cherry tomatoes, washed
  • 1 pack of Vio Life vegan feta
  • 2 cloves garlic, minced
  • Zest of ½ lemon
  • a drizzle of olive oil
  • 1 tsp dried oregano
  • pink Himalyan salt, to taste
  • black pepper, to taste
  • Fresh basil, for garnish


Directions:

01. Pre-heat the oven to 200 degrees. 
02. In a baking dish, combine the cherry tomatoes, garlic, lemon zest, oregano and olive oil. Mix well and place the feta in the middle. Season with salt and pepper.
03. Place the dish in the oven and bake for 20 minutes. Meanwhile, cook the pasta, drain and set aside.
04. When the tomatoes and feta are done, take it out of the oven and burst the tomatoes with a fork. Mix in pasta and combine everything. Garnish with fresh basil and serve alongside greens drizzled with lemon and olive oil.
