Ginger Miso Fried Rice

This is the perfect quick weeknight dinner that everyone will love. Ginger & miso give this simple dish so much flavor, you won’t get enough!

Serves four.

Ingredients: (preferably organic)

  • 1 tbsp coconut oil
  • 1 clove garlic, finely diced
  • 1 inch ginger, grated
  • 4 medium carrots, peeled & diced
  • 1 cup peas, frozen
  • 1 cup shiitake, diced
  • ½ cup sweet corn
  • 2 ½ cups basmati rice, cooked
  • 1 tbsp miso paste
  • coconut aminos, to taste
  • 1 scallion, thinly sliced
  • 1 lime, juiced
  • scallion, for garnish
  • black sesame seeds, for garnish
  • lime, for garnish


Directions:

01. Heat the coconut oil in a large pan, add ginger & garlic and sauté until golden.
02. Add the carrots & frozen peas with a splash of water and let simmer covered for 10 minutes until soft.
03. Add sweet corn & mushrooms, mix well and let cook covered for another 5 minutes.
04. Add in the cooked rice, mix well with the veggies and season with miso paste and coconut aminos. Turn up the heat to let the rice at the bottom of the pan crisp up.
05. Top with fresh scallions and squeeze lime juice over and give it another stir. Serve with more scallion, black sesame seeds & lime.
