Nori Tofu Wrap with Peanut Sauce

This is a wonderful lunch or dinner if you feel like having something fresh and light yet super satisfying. It’s packed with essential micronutrients like iodine and protective antioxidants from the nori and plant protein from the tofu. The peanut lime sauce adds that special kick to the combo you won’t get enough of!

Serves one.

Ingredients: (preferably organic)

  • 2 sheets nori
  • ½ block smoked tofu, sliced
  • 1 carrot, peeled & thinly shaved
  • ¼ cucumber, thinly shaved
  • ½ avocado, sliced
  • a handful onion sprouts


Peanut lime dressing:

  • 2 tbsp peanut butter
  • a sqeeze of lime juice
  • 1 tbsp coconut aminos or tamari sauce
  • 2-3 tbsp cold water


Directions:

01. Make the dressing by mixing all of the ingredients together in a small bowl and stirring until combined.
02. Fill the nori sheets with tofu, carrot, cucumber, avocado and sprouts and drizzle over some of the dressing. Roll up, dip in more sauce & enjoy!

Tip: Do not overfill the wrap as it won’t hold together, in that case you can just wrap another nori sheet around.
