Perfect Chopped Salad

Savoring all the flavors of late summer with this salad! It has been a longtime easy lunch go-to of mine, as it uses simple ingredients and is super easy to make. It’s full of fiber and vitamins from the tomatoes, cucumber and arugula, healthy unsaturated fats from the avocado and olives and plant protein as well as iron from the chickpeas.

Ingredients: (preferably organic)

  • 2 cups arugula, washed & chopped
  • ½ cucumber, chopped
  • ½ avocado, chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup chickpeas, drained & rinsed
  • ¼ cup Kalamata olives, pitted & chopped


Simple salad dressing

  • ½ lemon
  • 2 tbsp olive oil
  • splash of maple syrup
  • Himalayan pink salt, to taste


Directions:

01. In a large bowl, toss together the arugula, cucumber, avocado, tomatoes, chickpeas and olives.
02. Use a small mixing bowl or jar to combine the dressing ingredients, mix well and pour over the salad. Enjoy!
