Vegan Pesto

This pesto is so good, it deserves its own recipe post! It goes with everything, it’s delicious on pasta, salads, veggie dishes, sandwiches and even as a dip. It’s vegan, nut-free and loaded with nutrients from the sunflower seeds (zinc & selenium), olive oil (unsaturated fatty acids) and nutritional yeast (B-vitamins).

Ingredients: (preferably organic)

  • 2 cups fresh basil
  • ¼ cup sunflower seeds
  • ¼ cup nutritional yeast
  • ½ lemon, juiced
  • ¼ cup olive oil
  • 2 tbsp cold water
  • salt, to taste


Directions:

01. Add all ingredients to a high-speed blender or food processor and blend.
02. Use the pesto immediately on your pasta or other favorite dish and store the rest in an airtight glass container for up to two days. Tip: Drizzle olive oil on top to prevent oxidation when storing.
